This champagne comes from 2 parcels of old vines of Chardonnay,
facing south in mid hill of the village of Ecueil.
The expression of this terroir is preserved and enhanced by
fermentation in oak barrels, followed by regular batonnage. The malolactic
fermentation is not sought and long aging was used to reveal an
exceptional Champagne. To ensure the purity of the vintage, the wine
is not filtered.
In both rich and fresh, this champagne is naturally balanced and fits very
well with low dosage (2 g/l), resulting mostly from residual sugar.
Eye: Gold intense with persistent bubbles.
Aroma: A delicate minerality, toasty notes and tropical fruit.
Taste: The champagne is fresh and rich and has the same tasting notes
as its nose, with a long finish on freshness.
